Ingredients

For the Crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ tsp salt

½ cup unsalted butter, melted

1 large egg yolk

1 tsp vanilla extract

For the Pumpkin Filling:

1 (15 oz) can pure pumpkin puree

¾ cup brown sugar, packed

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

¼ tsp ground cloves

½ tsp salt

1 tsp vanilla extract

2 large eggs

1 cup sweetened condensed milk

For Topping (optional):

½ cup chopped pecans

Whipped cream for serving

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

      Make the Crust:

In a medium bowl, mix together the flour, granulated sugar, and salt. Add the melted butter, egg yolk, and vanilla extract. Stir until the mixture comes together and forms a dough. Press the dough evenly into the bottom of the prepared baking dish. Prick with a fork to prevent bubbling.

          Bake the Crust:

Bake the crust in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly while preparing the filling.

              Prepare the Pumpkin Filling:

In a large mixing bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, cloves, and salt. Stir in the vanilla extract, followed by the eggs one at a time, mixing well after each addition. Finally, add the sweetened condensed milk and continue mixing until smooth and fully incorporated.

                  Combine:

Pour the pumpkin filling over the pre-baked crust and spread it evenly using a spatula. If desired, sprinkle the chopped pecans over the top for a delightful crunch.

                      Bake the Bars:

Return to the oven and bake for 30-35 minutes, or until the filling is set and a toothpick inserted in the center comes out clean. Allow the bars to cool in the baking dish for at least 1 hour before transferring them to the refrigerator to chill completely for another hour.

                          Slice and Serve:

Once chilled, carefully lift the bars out of the baking dish using the parchment paper (if used). Cut into squares or rectangles and serve them with a dollop of whipped cream on top if desired.
