Ingredients
  

1 cup orzo pasta

2 cups vegetable broth

1 cup pure pumpkin puree (not pie filling)

1/2 cup grated Parmesan cheese

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 tsp dried sage

1/4 tsp nutmeg

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Toast Orzo: Add the orzo to the saucepan and stir well to coat it in the oil. Cook for about 1-2 minutes to lightly toast the orzo.

      Add Broth and Pumpkin: Pour in the vegetable broth, followed by the pumpkin puree, and stir to combine. Sprinkle in the dried sage and nutmeg, seasoning with salt and pepper to taste.

        Cook Orzo: Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Incorporate Cheese: Once the orzo is cooked, remove it from the heat and stir in the grated Parmesan cheese until melted and creamy.
