Pumpkin Cream Cheese Muffins

For the Muffin Batter:

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

½ cup granulated sugar

½ cup brown sugar, packed

1 cup canned pumpkin puree (not pumpkin pie filling)

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

1 egg yolk

For Topping (Optional):

¼ cup chopped pecans or walnuts

1 tbsp granulated sugar for sprinkling

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

    Prepare the Cream Cheese Filling: In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and the egg yolk. Beat until smooth and creamy. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.

        Combine Wet Ingredients: In another mixing bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth and well blended.

          Combine Wet and Dry: Gradually add the wet ingredient mixture to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

            Add Cream Cheese Filling: Fill each muffin cup about ⅔ full with the pumpkin batter. Then, add a spoonful of the cream cheese filling on top of the batter in each muffin cup. Finally, cover the cream cheese filling with a little more pumpkin batter until the cups are about ¾ full.

              Optional Topping: If desired, sprinkle chopped nuts and a touch of granulated sugar on top of each muffin.

                Bake: Bake for 18-22 minutes or until a toothpick inserted into the muffin (not the cream cheese center) comes out clean.

                  Cool: Let the muffins cool in the tin for about 5-10 minutes before transferring to a wire rack to cool completely.
