During the fall months, pumpkin becomes a centerpiece in many culinary creations, celebrated for its rich flavor and vibrant color. Its cultural significance runs deep, often associated with harvest festivals and Halloween traditions, where pumpkins are carved into jack-o'-lanterns or used to adorn tables. Beyond its decorative charm, pumpkin is a versatile ingredient that finds its way into pies, soups, breads, and, of course, desserts like our whoopie pies.

Ingredients

For the Cookies:

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup vegetable oil

1 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

For the Cream Cheese Filling:

8 oz cream cheese, softened

4 tablespoons unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Prepare the Cookie Batter:

      - In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, vanilla extract, and eggs. Mix until smooth and well combined.

        - In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

          - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.

            Bake the Cookies:

              - Using a tablespoon or cookie scoop, drop rounds of batter onto the prepared baking sheets, spacing them about 2 inches apart.

                - Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

                  Make the Cream Cheese Filling:

                    - In a medium bowl, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well incorporated and fluffy.

                      Assemble the Whoopie Pies:

                        - Once the cookies are completely cool, take one cookie and spread a generous amount of cream cheese filling on the flat side. Top with another cookie, flat side down, to create a sandwich. Repeat with the remaining cookies.

                          Chill and Serve:

                            - For the best flavor, refrigerate the whoopie pies for about 30 minutes before serving. This lets the filling set slightly and the flavors meld together.

Enjoy your delicious Pumpkin Chocolate Chip Whoopie Pies!
