Ingredients

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup coconut oil, melted

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

Optional: 1/2 cup chopped walnuts or pecans

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easier removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, melted coconut oil, brown sugar, and granulated sugar. Whisk them together until well blended.

Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each one is fully incorporated before adding the next. Then, add in the vanilla extract and mix until smooth.

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. This helps evenly distribute the leavening agents and spices.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the pumpkin mixture. Stir gently until just combined—be careful not to overmix.

Fold in the Chocolate Chips: Gently fold in the chocolate chips and the nuts if you're using them. The batter will be thick but should be well mixed.

Pour into the Pan: Transfer the batter to the prepared baking pan and spread it evenly with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs (but not wet batter).

Cool and Cut: Allow the squares to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. Once cool, cut into squares and serve.

Enjoy: Enjoy these deliciously spiced Pumpkin Chocolate Chip Snack Squares as a cozy treat for any time of the day!
