Instructions

Prepare the Pear Filling:

    - In a medium skillet over medium heat, melt 1 tablespoon of butter.

      - Add the sliced pears, brown sugar, cinnamon, and lemon juice.

        - Cook for about 5-7 minutes until the pears are tender but still hold their shape. Remove from heat and let cool.

          Make the Shortcake Dough:

            - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

              - In a large bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.

                - Add the cold, cubed butter. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

                  - Pour in the buttermilk and vanilla extract. Stir until just combined; do not overmix.

                    Shape the Shortcake:

                      - Lightly flour a surface and turn out the dough. Gently knead a few times until it comes together.

                        - Roll out to about 1-inch thick. Cut into rounds (approximately 3 inches in diameter) and place on the prepared baking sheet.

                          - Brush the tops with the beaten egg for a nice golden color.

                            Bake the Shortcakes:

                              - Bake for 15-20 minutes or until golden.

                                - Remove from oven and let cool on a wire rack.

                                  Prepare the Almond Cream:

                                    - In a mixing bowl, combine the almond paste and softened butter. Beat until smooth.

                                      - Add the vanilla extract, egg, powdered sugar, and flour. Mix until well incorporated.

                                        Assemble the Dessert:

                                          - Once the shortcakes are cooled, slice each in half horizontally.

                                            - On the bottom half, layer a generous portion of the cooked pear filling.

                                              - Spread almond cream on top of the pear filling, then place the top half of the shortcake back on.

                                                Serving:

                                                  - Serve immediately with a dollop of whipped cream or crème fraîche if desired.
