2 ripe peaches, pitted and sliced

1 block (14 oz) firm tofu, drained and pressed

2 cups mixed salad greens (arugula, spinach, and kale)

1/4 cup red onion, thinly sliced

1/4 cup toasted pecans or walnuts

1 avocado, diced

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey or agave syrup

Salt and pepper to taste

Fresh basil or mint leaves for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into cubes. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Add the tofu cubes and season with a pinch of salt and pepper. Cook for about 5-7 minutes, turning occasionally until golden brown on all sides. Remove from heat and set aside to cool.

    Make the Dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey or agave syrup, salt, and pepper. Taste and adjust seasoning if necessary.

      Assemble the Salad Bowl: In a large salad bowl, layer the mixed greens as the base. Add the sautéed tofu, sliced peaches, diced avocado, red onion, and toasted nuts.

        Add Cheese and Dressing: If using, sprinkle the feta cheese over the salad. Drizzle the dressing evenly across the ingredients.
