2 lbs flank steak or sirloin

1 cup fresh peaches, diced (or you can use canned peaches if out of season)

1/2 cup soy sauce

1/4 cup brown sugar

3 tablespoons rice vinegar

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground black pepper

1 teaspoon red pepper flakes (optional for a kick)

2 tablespoons olive oil

Fresh mint leaves, for garnish

Prepare the Marinade: In a blender, combine the diced peaches, soy sauce, brown sugar, rice vinegar, honey, garlic, ginger, black pepper, and red pepper flakes. Blend until smooth to create a marinade.

    Marinate the Beef: Place the flank steak in a large resealable bag or a shallow dish. Pour half of the peach glaze over the beef, ensuring it's well-coated. Reserve the other half for glazing during cooking. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

      Preheat the Grill/Pan: If using a grill, preheat to medium-high heat. For a stovetop, heat olive oil in a large skillet over medium-high heat.

        Cook the Beef: Remove the beef from the marinade and let any excess drip off. Grill or sear the steak for about 6-8 minutes on each side, or until it reaches your desired level of doneness. Brush with the reserved peach glaze during the last few minutes of cooking for added flavor.

          Rest and Slice: Once cooked, remove the beef from the heat and let it rest for 10 minutes. This helps retain the juices. Slice against the grain into thin strips.
