3 ripe peaches, pitted and diced

1 cup coconut milk (or any milk of your choice)

1/2 cup Greek yogurt (optional for creaminess)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon pure vanilla extract

1 tablespoon lemon juice

Pinch of salt

Prepare the Peaches: In a blender, combine the diced peaches, honey (or maple syrup), lemon juice, and a pinch of salt. Blend until smooth but still slightly chunky to retain some peach texture.

    Make the Cream Mixture: In another bowl, mix the coconut milk, Greek yogurt, vanilla extract, and a pinch of salt until smooth and well combined.

      Layer the Pops: Take your popsicle molds and fill each mold halfway with the peach puree. Use a spoon to pack it down lightly.

        Add the Cream Layer: Carefully pour the cream mixture into each mold, filling them up to about 3/4 full.

          Complete the Pops: Top off each mold with more peach puree and gently swirl the mixtures together using a toothpick or skewer for a marbled effect.

            Insert Sticks: If your molds don’t have built-in sticks, insert the popsicle sticks.

              Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.

                Unmold and Enjoy: When ready to enjoy, run warm water over the outside of the molds for a few seconds to release the pops easily. Serve immediately and bask in the summer flavors!
