Ingredients

2 cups cooked chicken breast, shredded

1 large ripe peach, diced

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup mayonnaise

1 tablespoon honey

1 teaspoon Dijon mustard

1/4 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup almonds, toasted and chopped

4 large buttery croissants

Fresh arugula or mixed greens for serving (optional)

Instructions

Prepare the Chicken Salad: In a large mixing bowl, combine the shredded chicken, diced peach, Greek yogurt, mayonnaise, honey, Dijon mustard, salt, and black pepper. Mix well until all the ingredients are evenly coated.

Add Crunch and Flavor: Fold in the finely chopped celery, red onion, and toasted almonds into the chicken mixture. Be gentle to maintain the texture of the peaches and chicken.

Taste Test: Taste the chicken salad and adjust the seasonings if necessary. You may want to add a touch more salt or a drizzle of honey depending on your preference.

Chill the Mixture: Cover the bowl with plastic wrap and place the chicken salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

Prepare the Croissants: While the chicken salad is chilling, slice the croissants in half lengthwise. If desired, lightly toast them in a skillet or toaster oven for extra crunch.

Assemble the Croissants: Once the chicken salad has chilled, spoon a generous portion of the salad onto the bottom half of each croissant. Top with fresh arugula or mixed greens if using.

Finish and Serve: Place the top half of the croissant on the salad. Serve immediately, or wrap them up for a picnic delight!
