Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted and slightly cooled

1 large egg

1 teaspoon vanilla extract

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 cups fresh peaches, peeled and chopped

1/2 cup chopped walnuts or pecans (optional)

Turbinado sugar for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together until well blended.

Whisk Wet Ingredients: In another bowl, whisk together the melted butter, egg, vanilla extract, and buttermilk until smooth and creamy.

Combine Ingredients: Pour the wet ingredient mixture into the dry ingredients and stir gently until just combined. Be careful not to over-mix.

Fold in Peaches and Nuts: Gently fold in the chopped peaches and walnuts or pecans if using, ensuring even distribution throughout the batter.

Fill Muffin Cups: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle a little turbinado sugar on top of each muffin for a crunchy finish, if desired.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean and the tops are golden brown.

Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
