Ingredients

2 cups cooked chicken breast, shredded

2 ripe peaches, pitted and sliced

1 cup fresh basil leaves, chopped

1 cup arugula or mixed salad greens

½ cup feta cheese, crumbled

¼ cup walnuts, toasted and roughly chopped

¼ cup red onion, thinly sliced

⅓ cup balsamic vinaigrette dressing

Salt and pepper to taste

Instructions

Prepare the Ingredients: Start by cooking your chicken breast. You can grill, bake, or boil it until fully cooked, then shred it using two forks. Allow the chicken to cool.

Toast the Walnuts: In a small skillet over medium heat, toast the walnuts for about 5 minutes or until they are golden and fragrant. Stir frequently to avoid burning. Set aside to cool.

Combine the Base: In a large mixing bowl, add the shredded chicken, sliced peaches, chopped basil, arugula or mixed greens, red onion, and crumbled feta cheese. Gently toss to combine all the ingredients without bruising the peaches.

Dress the Salad: Drizzle the balsamic vinaigrette over the salad mixture. Toss gently to coat the ingredients evenly. Season with salt and pepper to taste.

Finish and Serve: Once everything is well mixed, plate the salad in bowls. Sprinkle the toasted walnuts on top before serving for an extra crunch.

Enjoy: Serve immediately, or refrigerate for a short while if you prefer it chilled. This salad pairs wonderfully with grilled bread or as a light main dish.
