Ingredients

2 large ripe avocados

4 slices of sourdough bread

1 cup freshly grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1/4 cup cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish

Instructions

Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Add lemon juice, garlic powder, salt, and black pepper. Mash the mixture with a fork until creamy but still slightly chunky. Set aside.

Preheat the Oven: Set your oven to broil on high.

Toast the Bread: Brush both sides of the sourdough bread slices with olive oil. Place them on a baking sheet and toast them in the oven for about 2-3 minutes on each side or until golden brown. Keep an eye on them to prevent burning.

Assemble the Toasts: Spread a generous layer of the mashed avocado mixture evenly over each toasted slice of sourdough.

Add the Parmesan Crust: Sprinkle a thick layer of grated Parmesan cheese over the avocado on each toast. If you're using red pepper flakes, sprinkle them on top for an added kick.

Broil the Toasts: Return the baking sheet to the oven and broil for 3-5 minutes, or until the cheese is melted and bubbly, creating a charming crust. Watch closely to avoid burning.

Garnish and Serve: Remove the toast from the oven, and let it cool for a minute. Top with halved cherry tomatoes and fresh basil leaves for a pop of color and freshness. Serve immediately.
