Ingredients
  

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 green zucchini, sliced into half-moons

1 small red onion, chopped into wedges

1 cup baby carrots, halved lengthwise

1 cup broccoli florets

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 tablespoons balsamic vinegar (optional)

Fresh parsley, chopped for garnish

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Veggies: Clean and chop all the vegetables into uniform pieces for even roasting. Place them in a large mixing bowl.

      Season Veggies: Drizzle the olive oil over the veggies. Sprinkle with garlic powder, Italian herbs, salt, and pepper. Toss everything together until the vegetables are well-coated with the oil and seasonings.

        Spread on Baking Sheet: Transfer the seasoned vegetables to a large baking sheet lined with parchment paper for easy cleanup. Ensure they are spread out evenly in a single layer, which helps them roast evenly.

          Roast in Oven: Place the baking sheet in the preheated oven and roast for 25-30 minutes, stirring halfway through. The veggies should be tender and slightly charred when done.

            Enhanced Flavor (optional): If you’d like to add a touch of acidity and sweetness, drizzle the balsamic vinegar over the veggies during the last 5 minutes of roasting.
