One-Pot Chicken Taco Macaroni

1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

3 cups chicken broth

2 cups elbow macaroni

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (with juices)

1 1/2 cups shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper. Remove the chicken from the pot and set aside.

    Sauté Aromatics: In the same pot, add the chopped onion. Sauté for about 3-4 minutes until translucent. Add the garlic and cook for about 30 seconds until fragrant.

      Spice it Up: Stir in the cumin, chili powder, smoked paprika, and cayenne pepper (if using) to the onion and garlic mixture. Cook for an additional minute to toast the spices.

        Combine Ingredients: Pour in the chicken broth and bring to a simmer. Add the elbow macaroni, black beans, corn, and diced tomatoes. Stir well to combine.

          Cook the Pasta: Return the cooked chicken to the pot. Cover and simmer for about 10-12 minutes or until the macaroni is tender, stirring occasionally to prevent sticking.

            Add Cheese: Once the pasta is cooked, remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning with more salt and pepper if necessary.
