2 cups grated zucchini (about 2 medium zucchinis)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsweetened applesauce

1/4 cup unsalted butter, melted

1 large egg

1 tsp vanilla extract

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1 cup chocolate chips or chopped nuts (optional)

1/2 cup shredded coconut (optional)

Instructions
 

Prep the Zucchini: Start by grating the zucchinis. If they are particularly watery, lightly squeeze out some of the moisture using a clean kitchen towel or cheesecloth. This will help keep the cookies from becoming too soggy.

    Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

      Mix Dry Ingredients: In a large mixing bowl, combine the flour, oats, brown sugar, granulated sugar, baking soda, baking powder, cinnamon, and salt. Mix well to ensure everything is evenly distributed.

        Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, applesauce, egg, and vanilla extract until well combined.

          Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid over-mixing.
