1 lb chicken tenders

1 cup pumpkin puree

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1 tbsp pumpkin spice blend

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

1/4 cup honey or maple syrup (for drizzling)

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

    In a mixing bowl, combine the pumpkin puree, pumpkin spice blend, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well blended.

      In another bowl, mix the breadcrumbs and grated Parmesan cheese together. This will give your tenders that delightful crispy crunch.

        Dip each chicken tender into the pumpkin mixture, ensuring it's fully coated. Then, roll it in the breadcrumb mixture, pressing gently so the crumbs stick well.
