Ingredients

1 cup uncooked long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets (about 1 medium head)

1 cup shredded sharp cheddar cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (to taste)

2 tablespoons olive oil

1/2 cup heavy cream

Fresh chopped parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Base: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients: Add the rice to the skillet and stir for a minute to toast it slightly. Pour in the vegetable broth, then add the onion powder, garlic powder, paprika, black pepper, and salt. Stir well to combine.

Add Broccoli: Gently fold in the fresh broccoli florets, making sure they are evenly distributed throughout the rice mixture.

Incorporate Cheese and Cream: Stir in the heavy cream, then add the sharp cheddar and Parmesan cheese, mixing until well combined.

Bake: Smooth the top of the mixture, sprinkle extra cheddar cheese on top for a gooey finish, and cover the skillet with a lid or aluminum foil. Bake in the preheated oven for 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.

Final Touches: Remove the lid/foil and bake for an additional 5-10 minutes for a bubbly, golden cheese topping. Check for doneness by ensuring the rice is cooked through and the broccoli is tender.

Serve: Remove the skillet from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley before serving. Enjoy your hearty, cheesy dish!
