1 lb ground beef

1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain white rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (frozen or canned)

2 cups shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Beef: In a large skillet or dutch oven over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat if necessary.

    Sauté Onions and Garlic: Add the diced onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes, until the onion becomes translucent.

      Prepare the Rice Mixture: Stir in the rice, beef broth, diced tomatoes (with their juices), corn, chili powder, paprika, cumin, salt, and pepper. Bring the mixture to a simmer.

        Cook the Rice: Cover the skillet and reduce the heat to low. Let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Add Cheese: Once the rice is tender, remove from heat and sprinkle 1.5 cups of shredded cheddar cheese over the top. Cover again for 3-5 minutes until the cheese melts.

            Serve: Fluff the casserole with a fork and garnish with the remaining cheese and fresh cilantro if desired. Serve warm and enjoy!
