Ingredients

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (white or brown)

2 cups beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of mushroom soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Brown the Beef: In a large oven-safe skillet, heat the olive oil over medium heat. Add the ground beef, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes. Season with garlic powder, onion powder, smoked paprika, salt, and pepper to taste.

Add the Broccoli: Stir in the broccoli florets to the browned beef and cook for another 3-4 minutes, allowing the broccoli to soften slightly.

Mix in Rice and Liquid: Add the uncooked rice to the skillet, followed by the beef broth and cream of mushroom soup. Stir well to combine all ingredients evenly.

Simmer: Allow the mixture to come to a gentle simmer, then reduce the heat to low. Cook for about 5 minutes, stirring occasionally, until the rice absorbs some of the liquid.

Cheesy Layering: Remove from heat and stir in the 1 cup of shredded cheddar cheese until melted and well combined. Sprinkle additional cheese on top for a gooey finish.

Bake: Transfer the skillet into the preheated oven and bake for 25-30 minutes, or until the rice is fully cooked and the top is golden and bubbly.

Garnish and Serve: Once out of the oven, let the dish sit for about 5 minutes. Garnish with freshly chopped parsley if desired. Serve hot and enjoy your cheesy beef and broccoli bake!
