1 cup mixed nuts (walnuts, almonds, cashews), chopped

1/2 cup pumpkin seeds

1/2 cup dried cranberries or raisins

1/2 cup chocolate chips or cacao nibs (optional)

1/2 cup almond butter or peanut butter

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

Prepare the Base: In a large mixing bowl, combine rolled oats, chopped mixed nuts, pumpkin seeds, dried cranberries (or raisins), and chocolate chips (if using). Stir until all ingredients are evenly mixed.

    Make the Sticky Mixture: In a small saucepan over low heat, add the almond butter (or peanut butter), honey (or maple syrup), vanilla extract, and a pinch of salt. Stir continuously until the mixture is smooth and slightly warmed, about 2-3 minutes. Do not let it boil.

      Combine: Pour the sticky mixture over the dry ingredients in the mixing bowl. Use a spatula or wooden spoon to thoroughly combine everything, ensuring that the dry ingredients are completely coated.

        Press into the Pan: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal. Transfer the mixture to the dish and press it down firmly and evenly using your hands or the back of a spatula.

          Chill: Refrigerate the mixture for at least 1-2 hours, or until it is firm enough to cut into bars.

            Cut and Serve: Once set, remove from the pan using the parchment paper overhang and place it on a cutting board. Slice into bars or squares of your desired size.
