1 cup hummus (any flavor of your choice)

1 medium cucumber, thinly sliced

1 bell pepper (red, yellow, or orange), thinly sliced

1 large carrot, grated

1 cup baby spinach leaves

½ cup shredded purple cabbage

½ cup crumbled feta cheese (optional)

Salt and pepper to taste

2 tbsp light balsamic vinaigrette (optional)

Instructions
 

Prep the Ingredients: Wash and slice the cucumber, bell pepper, and grate the carrot. Rinse the baby spinach and shredded cabbage.
