Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1/2 cup mini chocolate chips (dairy-free if preferred)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup dried fruit (raisins, cranberries, or apricots)

1/2 tsp vanilla extract

A pinch of salt

Instructions

Prepare your pan: Line a 12-cup muffin tin with cupcake liners or lightly grease it for easy removal.

Combine wet ingredients: In a large mixing bowl, add the peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until well combined and smooth.

Add dry ingredients: Gradually fold in the rolled oats, mini chocolate chips, chopped nuts, and dried fruit. Stir until all ingredients are fully coated and evenly distributed.

Form the cups: Using a spoon, scoop the mixture into the prepared muffin tin cups, pressing down firmly to pack them tightly. Make sure the top is level, and you can use your fingers or the back of the spoon to create a slight indentation in the middle if desired.

Chill to set: Place the muffin tin in the refrigerator for at least 30 minutes, or until the granola cups are firm and hold their shape.

Remove and serve: Once set, carefully peel away the liners or pop the cups out of the tin. Enjoy immediately, or store in an airtight container in the refrigerator for up to a week.
