Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (creamy or chunky, your choice)

1/3 cup honey or maple syrup

1/4 cup ground flaxseed

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

Instructions

Prepare the Muffin Tin: Line a standard muffin tin with paper liners or lightly grease it with cooking spray to prevent sticking.

Mix the Base: In a large mixing bowl, combine the rolled oats, ground flaxseed, and sea salt. Stir in the peanut butter and honey (or maple syrup) until well combined. The mixture should be thick but sticky.

Add Flavor and Texture: Fold in the vanilla extract, mini chocolate chips, and chopped nuts into the oat mixture. This adds texture and flavor to your granola cups.

Form the Cups: Using a spoon or your fingers, pack the mixture firmly into the lined muffin cups, pressing down to create a solid base and a slight indentation in the center for filling later if you wish.

Chill and Set: Place the muffin tin in the refrigerator for at least 1 hour, or until the cups are firm and set.

Serve: Once set, carefully remove the granola cups from the muffin tin. You can serve them plain, or fill the center with a little extra peanut butter, yogurt, or your favorite fruit jam.

Store: Keep any leftovers in an airtight container in the refrigerator for up to a week.
