Ingredients

1 cup creamy peanut butter (natural recommended)

1/4 cup coconut oil, melted

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/4 tsp salt

1 cup dark chocolate chips (dairy-free for vegan option)

Cupcake liners (for mold)

Instructions

Prepare the Cupcake Liners: Place cupcake liners in a muffin tin. This will help shape your peanut butter cups for easy removal later.

Make the Peanut Butter Mixture: In a medium mixing bowl, combine the peanut butter, melted coconut oil, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and creamy.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring after each interval until fully melted and smooth. Alternatively, you can use a double boiler over low heat.

Assemble the Cups: Spoon about 1 tablespoon of the melted chocolate into the bottom of each cupcake liner, spreading it to coat the bottom evenly. Place the tray in the freezer for about 10 minutes to harden.

Add the Peanut Butter Layer: Once the chocolate base is set, add about 1 tablespoon of the peanut butter mixture on top of the hardened chocolate in each liner. Spread gently but evenly.

Finish with More Chocolate: Top each peanut butter layer with another tablespoon of melted chocolate, ensuring it completely covers the peanut butter. Smooth the top with a spatula if necessary.

Chill Again: Return the muffin tin to the freezer for an additional 20-30 minutes or until fully set.

Serve and Enjoy: Once set, remove the peanut butter cups from the liners and enjoy your no-bake treats! Store leftovers in an airtight container in the fridge for up to a week.
