2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

1 teaspoon pure vanilla extract

1 cup heavy whipping cream

Fresh lemon slices and mint leaves for garnish (optional)

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated. Divide the mixture evenly into the bottom of your jars (approximately 1-2 tablespoons per jar) and firmly press it down. Set aside.

    Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar, lemon zest, lemon juice, and vanilla extract, continuing to mix until fully combined and creamy.

      Whip the Cream: In another bowl, whip the heavy cream on medium-high speed until stiff peaks form. Be careful not to over-whip.

        Fold Cream into Cheesecake Mixture: Gently fold the whipped cream into the cream cheese mixture using a spatula. Start by adding a small amount of whipped cream to lighten the mixture, then fold in the remaining whipped cream until fully combined and smooth.

          Assemble the Jars: Spoon or pipe the cheesecake filling over the crust in each jar, filling them about 3/4 full. Use the back of a spoon or a spatula to smooth the top.
