Ingredients

4 cups seedless watermelon, diced

1 cup rolled oats

1 cup granola (your favorite blend)

1/2 cup unsweetened shredded coconut

1/3 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Watermelon: Start by removing the rind and seeds from the watermelon. Dice the watermelon into small, bite-sized cubes and set it aside in a mixing bowl.

Make the Crisp Base: In a separate bowl, combine the rolled oats, granola, shredded coconut, cinnamon, and a pinch of salt. Mix well to ensure the dry ingredients are uniformly combined.

Mix the Wet Ingredients: In another bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until thoroughly mixed and smooth.

Combine Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients. Stir until the dry ingredients are evenly coated with the wet mixture.

Layer the Crisp: In a 9x9 inch baking dish, spread half of the oat mixture evenly on the bottom. Layer half of the diced watermelon on top, followed by the remaining crisp mixture. Finish with the rest of the watermelon on top.

Chill: Cover the dish with plastic wrap or a lid and refrigerate for at least 2 hours to allow the flavors to meld and the crisp to set.

Serve: Once chilled, slice into squares and serve. Garnish with fresh mint leaves for an added touch of freshness.
