2 medium apples, peeled and diced (Granny Smith or Honeycrisp recommended)

1 cup granulated sugar

1/2 cup unsalted butter

1/2 cup heavy cream

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup crushed graham crackers

1/2 cup chopped pecans (or walnuts)

1 cup whipped cream (store-bought or homemade)

Caramel sauce for drizzling

Optional: a pinch of sea salt for garnish

Instructions
 

Prepare the Apple Filling:

    - In a medium bowl, combine the diced apples with cinnamon and a tablespoon of sugar. Toss until well-coated and set aside.

      Make the Caramel Sauce:

        - In a saucepan over medium heat, melt the butter. Once melted, add the remaining sugar and stir until it resembles a thick paste.

          - Gradually pour in the heavy cream while whisking continuously until the mixture is smooth. Allow it to simmer for about 2-3 minutes.

            - Remove from heat and stir in the vanilla extract. Let it cool slightly.

              Prepare the Graham Cracker Crust:

                - In a separate bowl, mix the crushed graham crackers and chopped pecans. Drizzle in a couple of tablespoons of the cooled caramel sauce and stir until the mixture holds together slightly.
