Mini Turkey Meatloaves with Honey Glaze

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped onion

1/4 cup grated carrot

1 egg, beaten

2 cloves garlic, minced

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

For the Honey Glaze:

1/4 cup honey

1 tbsp Dijon mustard

1 tbsp apple cider vinegar

1/2 tsp garlic powder

Preheat the oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it.

    Prepare the meatloaf mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, chopped onion, grated carrot, beaten egg, minced garlic, Worcestershire sauce, dried thyme, smoked paprika, and season with salt and pepper. Use your hands or a spatula to mix until well combined but do not overwork the meat.

      Form mini loaves: Divide the turkey mixture into 8 equal portions and shape each portion into a small loaf (about the size of your palm). Arrange the mini loaves on the prepared baking sheet, spacing them evenly.

        Make the honey glaze: In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, and garlic powder until smooth.

          Glaze the mini loaves: Brush the honey glaze generously over the tops of each mini turkey meatloaf, ensuring they are well coated.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the internal temperature of the meatloaves reaches 165°F (74°C) and they are cooked through.

              Serve: Once cooked, remove the mini meatloaves from the oven, and let them rest for 5 minutes. Brush with any remaining glaze if desired, then serve warm. These mini turkey meatloaves pair excellently with mashed potatoes or a fresh green salad.
