8 large eggs

1 cup turkey bacon, chopped

1 cup spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or your favorite)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Cooking spray or olive oil (for greasing)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a muffin tin with cooking spray or a light drizzle of olive oil to prevent sticking.

    Cook the Turkey Bacon: In a skillet over medium heat, cook the chopped turkey bacon until it's crispy (about 5-7 minutes). Remove from heat and let it drain on a paper towel to remove excess grease.

      Prepare the Egg Mixture: In a large mixing bowl, crack the eight eggs and whisk them until fully combined. Season the eggs with salt, black pepper, and garlic powder to taste.

        Combine Ingredients: Add the chopped spinach, halved cherry tomatoes, cooked turkey bacon, and shredded cheese into the egg mixture. Stir gently to combine all ingredients evenly.

          Fill the Muffin Tin: Pour the egg mixture into each muffin cup, filling them about 3/4 of the way full to allow for expansion during baking.

            Bake: Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes, or until the egg cups are puffed and set in the center. A toothpick inserted should come out clean.

              Cool and Serve: Once cooked, remove the muffin tin from the oven and allow the egg cups to cool for a few minutes. Carefully run a knife around the edges to help release them from the muffin tin, then remove and serve warm.
