1 lb ground turkey or beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce (Romaine or iceberg)

½ cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper, to taste

Instructions
 

Sauté the Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

    Brown the Livestock: Add the ground turkey or beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.

      Season the Mixture: Stir in the taco seasoning, black beans, and corn. Cook for an additional 3-5 minutes until heated through. Season with salt and pepper to taste.

        Prepare the Lettuce Wraps: While the meat mixture is cooking, wash and dry the lettuce leaves. These will act as your taco shells.

          Build Your Wrap: Once the meat mixture is ready, start assembling your wraps. Take a lettuce leaf and spoon a heaping tablespoon of the taco mixture into the center.
