Mini Mediterranean Pita Toasts

4 whole wheat pitas

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Optional: 1/4 teaspoon garlic powder for extra flavor

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Pitas: Cut each whole wheat pita into quarters (like a pizza) for bite-sized portions. Arrange the pita triangles on a baking sheet.

      Toast the Pitas: Brush the pita pieces lightly with olive oil and sprinkle with a pinch of salt. Bake them in the preheated oven for about 8-10 minutes or until they become golden and crispy. Remove from the oven and let them cool slightly.

        Prepare the Topping: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, red onion, Kalamata olives, feta cheese, and chopped parsley.

          Dress the Mixture: In a separate small bowl, whisk together the remaining olive oil, balsamic vinegar, dried oregano, and optional garlic powder. Pour the dressing over the vegetable mixture, gently tossing to combine. Season with salt and pepper to taste.
