Mini Egg and Cheese Tortilla Cups

4 large flour tortillas

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese (or cheese of your choice)

1/2 cup diced bell peppers (any color)

1/4 cup diced onion

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

Olive oil (for greasing muffin tin)

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Tortillas: Using a large round cookie cutter or a glass, cut out circles from each tortilla. You will need 4 circles for each muffin cup.

      Grease the Muffin Tin: Lightly grease a muffin tin with olive oil to prevent sticking.

        Shape the Tortilla Cups: Gently press each tortilla circle into a muffin cup in the tin. It should create a small bowl shape.

          Prepare the Filling: In a medium-sized bowl, whisk together the eggs and milk until well combined. Add in the diced bell peppers, diced onion, salt, black pepper, and paprika. Mix until everything is evenly distributed.

            Fill the Tortilla Cups: Divide the egg mixture among the tortilla cups, filling each about three-quarters full.

              Add Cheese: Top each filled cup with shredded cheese.

                Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg is set, and the tops are golden and bubbly.

                  Cool & Serve: Once baked, let the tortilla cups cool in the tin for a few minutes. Carefully remove them using a spoon or fork. Garnish with freshly chopped chives or parsley if desired.
