Mini Chicken Taco Wonton Cups

1 package (12-16) wonton wrappers

1 lb ground chicken

1 cup taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup diced tomatoes (fresh or canned, with juices)

½ cup diced red onion

½ cup chopped fresh cilantro

1 avocado, diced (for topping)

1 cup sour cream or Greek yogurt (for serving)

Cooking oil spray (for greasing the muffin tin)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Cups: Lightly spray a muffin tin with cooking oil. Press a wonton wrapper into each cavity, gently molding it into the shape of a cup.

      Bake the Wonton Shells: Bake the wonton cups in the preheated oven for about 8-10 minutes, or until they are golden brown and crisp. Keep an eye on them to prevent burning.

        Cook the Chicken: In a skillet over medium heat, add the ground chicken. Cook until browned and fully cooked through, breaking it up with a spatula as it cooks (about 6-8 minutes).

              Fill the Wonton Cups: Remove the baked wonton cups from the oven. Spoon the chicken mixture generously into each cup, filling them nicely without overflowing.

                Add the Cheese: Sprinkle shredded cheese on top of the filled cups. Return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
