Ingredients

For the Chicken:

1 pound boneless, skinless chicken thighs

1 cup breadcrumbs (preferably Italian seasoned)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

1 large egg

½ cup all-purpose flour

Olive oil for frying

For the Sliders:

1 can (16.5 oz) refrigerated biscuit dough (8 biscuits)

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish)

Optional: Red pepper flakes for serving

Instructions

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - In a shallow bowl, mix together breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper.

        - In another bowl, beat the egg. Place the flour on a plate.

          - Dip each chicken thigh in flour, then into the egg, and finally coat with the breadcrumb mixture. Make sure each piece is well-covered.

            Fry the Chicken:

              - In a large skillet over medium heat, add enough olive oil to coat the bottom. Once hot, fry the breaded chicken thighs for about 4-5 minutes per side until golden brown and cooked through. (It’s best to do this in batches to avoid overcrowding the skillet).

                - Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.

                  Assemble the Sliders:

                    - Open the biscuit dough and separate it carefully. Flatten each biscuit slightly.

                      - Place a piece of fried chicken on the center of each biscuit.

                        - Spoon a tablespoon of marinara sauce over the chicken, then sprinkle with mozzarella cheese.

                          Bake:

                            - Carefully fold the sides of the biscuit over the chicken and toppings, creating a bun-like effect. Press gently to seal.

                              - Place the sliders on a baking sheet lined with parchment paper, seam side down.

                                - Bake in the preheated oven for 10-12 minutes or until the biscuits are golden brown.

                                  Serve:

                                    - Remove the sliders from the oven. Garnish with fresh basil leaves and optional red pepper flakes.

                                      - Serve warm and enjoy your Mini Chicken Parm Biscuit Sliders!
