1 medium head of cauliflower, cut into small florets

1 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/2 cup almond flour (or breadcrumbs for a non-gluten-free option)

8 small slider buns (or mini cauliflower rounds for a low-carb option)

2 tablespoons butter, for grilling

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare Cauliflower: Steam the cauliflower florets until tender (about 5-7 minutes). Drain and let cool slightly before transferring them to a clean kitchen towel. Squeeze out excess moisture until the cauliflower is as dry as possible.

    Blend the Mixture: In a large bowl, incorporate the steamed cauliflower, mozzarella, cheddar, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Use a fork or masher to blend the ingredients together until well combined. Add almond flour to the mixture and mix until you achieve a dough-like consistency.

      Shape the Sliders: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Use your hands to form small slider-sized patties from the cauliflower mixture, about the size of your slider buns. You should yield roughly 8-10 patties.

        Bake: Place the patties on the prepared baking sheet and bake for about 20-25 minutes, flipping halfway through, until they are golden brown and firm.

          Grill the Sliders: In a skillet, melt 1 tablespoon of butter over medium heat. Place a slider bun in the skillet, add a cauliflower patty, and top with an extra slice of cheese if desired. Cap it with another slider bun. Grill for about 2-3 minutes on each side until the buns are golden brown and the cheese is melted. Repeat with remaining sliders.
