Ingredients
  

4 small flour tortillas

1 cup shredded cheese (cheddar, Monterrey Jack, or a mix)

1/2 cup cooked chicken, diced (optional)

1/4 cup bell pepper, finely chopped

1/4 cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped (optional)

1 teaspoon taco seasoning

Cooking spray

Salsa and sour cream for serving

Prep the Ingredients: Start by gathering all your ingredients. If you are using chicken, make sure it is cooked and diced into small pieces. Chop the bell pepper, red onion, and cilantro if using.

    Mix the Filling: In a mixing bowl, combine the shredded cheese, diced chicken (if using), bell pepper, red onion, cilantro, and taco seasoning. Mix well until all ingredients are evenly blended.

      Cut Tortillas: Using a cookie cutter or a cup, cut the flour tortillas into circular shapes. You should get about 8 to 10 circles from the tortillas.

        Fill the Quesadilla Circles: Lay half of the tortilla circles on a clean surface. Place about 1-2 tablespoons of the filling mixture into the center of each circle, leaving a small border around the edge. Top with the remaining tortilla circles, pressing down gently to seal them.

          Prepare for Air Frying: Preheat your air fryer to 350°F (180°C). Lightly spray the outside of the quesadilla circles with cooking spray to ensure a crispy finish.

            Air Fry: Place the quesadilla circles in a single layer in the air fryer basket, working in batches if necessary. Air fry for about 5-7 minutes, or until the tortillas are golden brown and crispy, flipping halfway through for even cooking.

              Serve: Once cooked, remove the quesadilla circles from the air fryer and let them cool for a minute. Serve warm with salsa and sour cream on the side.
