4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup milk (whole or 2%)

1/4 cup unsalted butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper to taste

1/4 cup fresh chives, chopped (for garnish)

1/2 cup shredded cheddar cheese (optional)

Instructions
 

Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot, followed by the vegetable broth. Stir in the dried thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 15-20 minutes, or until the potatoes are tender.

      Blend for Creaminess: Once the potatoes are tender, remove the pot from heat. Using an immersion blender, blend the soup until creamy and smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a blender. Be careful with the hot liquid!

        Add Dairy: Return the blended soup to low heat. Stir in the heavy cream and milk, adjusting the consistency to your liking. Let it warm through (do not boil) and adjust seasoning with additional salt and pepper if desired.

          Serve: Ladle the creamy potato soup into bowls. Top with shredded cheddar cheese and a sprinkle of fresh chives for a pop of color and additional flavor.
