1 lb Brussels sprouts, trimmed and halved

8 oz thick-cut bacon, diced

1/4 cup pure maple syrup

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

1/4 cup pecans, chopped (optional)

Fresh parsley, for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, minced garlic, smoked paprika, salt, and black pepper. Toss until the Brussels sprouts are evenly coated.

      Cook the Bacon: In a skillet over medium heat, cook the diced bacon until it’s crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the pan.

        Make the Maple Mixture: In the same skillet, reduce the heat to low and add the maple syrup and Dijon mustard to the bacon fat. Stir well to combine and allow it to warm for about 2 minutes, creating a glaze.

          Combine Ingredients: In the bowl with the Brussels sprouts, add the crispy bacon and half of the maple glaze. Toss again to ensure everything is well-coated.

            Bake: Spread the Brussels sprouts and bacon mixture in a single layer on a large baking sheet. Bake in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and caramelized.

              Final Touch: Remove from the oven and drizzle the remaining maple glaze over the baked sprouts. If desired, sprinkle chopped pecans on top for added crunch.
