Ingredients

2 large carrots, peeled and chopped

2 medium parsnips, peeled and chopped

1 sweet potato, peeled and cubed

1 large beet, peeled and cubed

1 red onion, quartered

3 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

Optional: Chopped parsley for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

Prepare the Vegetables: In a large bowl, combine the chopped carrots, parsnips, sweet potato, beet, and red onion.

Make the Glaze: In a separate small bowl, whisk together the olive oil, maple syrup, Dijon mustard, rosemary, thyme, salt, and pepper until well combined.

Combine and Coat: Pour the glaze over the chopped vegetables, tossing to ensure they are evenly coated.

Spread on Baking Sheet: Transfer the vegetables to a large baking sheet, spreading them out in a single layer to promote even roasting.

Roast the Vegetables: Place the baking sheet in the preheated oven and roast for 25-30 minutes. Halfway through, stir the vegetables to ensure they roast evenly.

Check for Doneness: The vegetables should be tender and caramelized by the end of the roasting time. If needed, you can roast them for an additional 5-10 minutes.

Garnish and Serve: Once roasted, remove from the oven and allow to cool slightly. Sprinkle with chopped parsley if desired, then serve warm.
