1/2 cup popcorn kernels

1/4 cup unsalted butter

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon sea salt

1/4 teaspoon vanilla extract

1/4 cup chopped nuts (such as pecans or walnuts, optional)

1/4 cup mini chocolate chips (optional)

Instructions
 

Pop the Popcorn: In a large pot or air popper, pop the popcorn kernels according to the manufacturer's instructions. Set aside in a large mixing bowl.

    Prepare the Maple Cinnamon Mixture: In a small saucepan over medium heat, melt the unsalted butter. Once melted, stir in the pure maple syrup, ground cinnamon, sea salt, and vanilla extract. Continue to whisk until well-combined and heated through, about 2 minutes.

      Combine Popcorn and Coating: Pour the warm maple cinnamon mixture over the popped popcorn. Gently toss the popcorn using a spatula or your hands (make sure to be careful as it will be hot!) until all the popcorn is evenly coated.

        Add Nuts & Chocolate: If using, fold in the chopped nuts and mini chocolate chips until they are evenly distributed throughout the popcorn.

          Bake (Optional for Crunch): Preheat your oven to 300°F (150°C). Spread the coated popcorn mixture evenly on a baking sheet lined with parchment paper. Bake for 10-15 minutes, stirring halfway through, to enhance the crunchiness. Remove from the oven and let cool for a few minutes.

            Serve: Once cooled, break apart any clumps and serve in bowls or store in an airtight container for up to a week.
