Ingredients

8 large eggs

2 cups milk

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

4 cups cubed day-old bread (preferably sourdough)

1 ½ cups shredded cheddar cheese

1 cup cooked bacon, crumbled

1 cup diced bell peppers (any color)

½ cup diced green onions

½ teaspoon smoked paprika (optional)

Fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, onion powder, and smoked paprika (if using) until well combined.

Layer the Ingredients: In the prepared baking dish, evenly distribute the cubed bread across the bottom. Sprinkle the crumbled bacon, diced bell peppers, and half of the green onions over the bread.

Add Cheese: Sprinkle one cup of the shredded cheddar cheese on top of the layered mixture.

Pour the Egg Mixture: Slowly pour the egg mixture evenly over the entire casserole, ensuring every piece of bread is soaked with the egg.

Top with Cheese: Add the remaining cheddar cheese on top of the casserole.

Let it Sit: Allow the casserole to sit for 10-15 minutes, which will help the bread absorb the egg mixture.

Bake: Place the casserole in the preheated oven and bake for 35-45 minutes, or until the center is set and the top is golden brown.

Cool and Serve: Once baked, let the casserole cool for about 5-10 minutes before slicing. Garnish with the remaining green onions and chopped parsley, if desired.

Enjoy: Serve warm alongside fresh fruit or a light green salad for a complete breakfast!
