4 boneless, skinless chicken breasts

1/2 cup fresh lime juice (about 4 limes)

Zest of 2 limes

1/4 cup honey

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together lime juice, lime zest, honey, soy sauce, olive oil, minced garlic, ground cumin, paprika, salt, and pepper. Add the chicken breasts, ensuring they are completely covered in the marinade. Cover and refrigerate for at least 1 hour (up to 4 hours for more flavor).

    Preheat the Grill or Oven: If grilling, preheat your grill to medium-high. If using the oven, preheat it to 400°F (200°C).

      Remove Chicken from Marinade: Take the chicken breasts out of the marinade and let any excess drip off. Reserve the marinade for the glaze.

        Cook the Chicken:

          - Grilling: Place the chicken breasts on the grill. Cook for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C).

            - Oven: Place marinated chicken breasts on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until cooked through.

              Make the Lime Glaze: In a small saucepan over medium heat, bring the reserved marinade to a boil. Allow it to simmer for about 5-7 minutes until it thickens slightly and reduces.

                Glaze the Chicken: Brush the lime glaze over the grilled or baked chicken breasts during the last 2-3 minutes of cooking. This will create a beautiful, glossy finish.

                  Serve: Remove the chicken from heat and let it rest for 5 minutes. Serve garnished with fresh cilantro and lime wedges on the side.
