6 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

4 garlic cloves, minced

2 tablespoons olive oil

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and black pepper, to taste

Lemon slices, for garnish

Fresh thyme sprigs, for garnish

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine honey, lemon juice, lemon zest, minced garlic, olive oil, thyme, salt, and pepper. Whisk together until well combined.

    Prepare the Chicken: Add the chicken thighs to the bowl, ensuring each thigh is well coated in the marinade. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Arrange & Bake: Place the marinated chicken thighs skin-side up in a large oven-safe skillet or baking dish. Pour the remaining marinade over the chicken.

          Bake: Bake for 30-35 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). If you prefer crispy skin, broil for an additional 2-3 minutes at the end.

            Rest: Remove from the oven and let the chicken rest for about 5 minutes. This allows the juices to redistribute, making the chicken tender and juicy.
