Lemon Garlic Shrimp and Asparagus Skillet

1 lb large shrimp, peeled and deveined

1 bunch of fresh asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 medium lemon, zested and juiced

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

¼ cup chicken or vegetable broth

2 tablespoons fresh parsley, chopped (for garnish)

Optional: lemon slices for garnish

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season the shrimp with salt, black pepper, and half of the lemon zest. Set aside.

    Heat the Skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the asparagus pieces. Stir-fry for about 3-4 minutes until they begin to soften but are still bright green. Remove the asparagus from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Be careful not to burn the garlic.

        Add the Shrimp: Add the seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 2 minutes.

          Combine and Flavor: Return the asparagus to the skillet. Pour in the lemon juice and chicken or vegetable broth, scraping any browned bits from the bottom of the pan. Add the remaining lemon zest, toss gently to combine all ingredients, and cook for another 2 minutes until everything is heated through.

            Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and adjust seasoning with more salt and pepper if desired. If you like, garnish with additional lemon slices for a vibrant presentation.
