1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or any nut butter of choice)

1/3 cup honey or maple syrup (for a vegan option)

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1/4 cup mini dark chocolate chips or chopped nuts for added texture

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, and honey or maple syrup. Stir until well combined.

    Add the Flavors: Grate the zest of the lemon and add it to the mixture, along with the fresh lemon juice, vanilla extract, and sea salt. Mix until everything is well incorporated. If desired, fold in chocolate chips or nuts for extra crunch.
