Honey Mustard Glazed Pork Tenderloin

1.5 lbs pork tenderloin

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon rosemary, finely chopped (fresh or dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, apple cider vinegar, minced garlic, smoked paprika, rosemary, salt, and pepper until well combined. Set aside about 1/4 of the marinade for basting later.

    Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (up to 8 hours for more flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade, shaking off excess. Sear the pork tenderloin in the hot skillet for 3-4 minutes on each side until golden brown.

          Bake the Pork: Once seared, brush the reserved marinade over the pork. Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

            Rest and Slice: Remove the skillet from the oven and let the pork rest for about 5-10 minutes. This allows the juices to redistribute. Slice the tenderloin into medallions.

              Garnish and Serve: Drizzle with extra glaze if desired and garnish with fresh parsley. Serve the pork slices alongside your choice of sides, such as roasted vegetables or mashed potatoes.
