1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup white rice (jasmine or basmati preferred)

2 cups chicken broth

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

2 tablespoons soy sauce

2 tablespoons olive oil

3 garlic cloves, minced

1 teaspoon fresh ginger, minced

Salt and pepper to taste

1 cup snap peas or peas (optional)

1/4 cup green onions, sliced (for garnish)

Lemon slices, for garnish

Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add to the skillet, cooking until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook Aromatics: In the same skillet, lower the heat to medium and add minced garlic and ginger. Sauté for about 1-2 minutes until fragrant.

      Combine Ingredients: Stir in the rice, ensuring it is coated with the garlic and ginger. Add the chicken broth, honey, lemon juice, lemon zest, and soy sauce. Mix well to combine.
