1 (2-3 pounds) boneless turkey breast, skin-on

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon paprika

Salt and black pepper to taste

Fresh herbs (rosemary or thyme) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a roasting pan with aluminum foil for easy cleanup.

    Prepare the Marinade: In a small bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and black pepper until well combined.

      Prepare the Turkey: Pat the turkey breast dry with paper towels. Place it in the prepared roasting pan, skin-side up. Gently loosen the skin with your fingers to create a pocket, being careful not to tear it.

        Marinate the Turkey: Pour half of the honey mustard mixture under the skin and rub it all over the meat. Brush the remaining marinade on top of the skin, ensuring it’s evenly coated.

          Roast the Turkey: Place the turkey breast in the preheated oven and roast it for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey with the pan juices every 20-30 minutes to enhance the glaze and keep the meat moist.

            Let it Rest: Once done, remove the turkey breast from the oven and cover it loosely with aluminum foil. Let it rest for 15-20 minutes before slicing to allow the juices to redistribute.
