1 pound large shrimp, peeled and deveined

3 tablespoons honey

3 tablespoons soy sauce (use low sodium if preferred)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon sesame oil (optional)

For the veggies:

2 cups broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1 zucchini, sliced

2 tablespoons olive oil

For serving:

2 cups cooked brown rice or quinoa

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Lemon wedges (optional)

Instructions
 

Marinate the Shrimp: In a bowl, combine honey, soy sauce, minced garlic, minced ginger, and a drizzle of olive oil. Add the shrimp, season with salt and pepper, and mix well to ensure the shrimp is evenly coated. Allow it to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).
